Toaster Oven Banana Bread Recipe

  • 3-4 bananas very ripe
  • 1/3 cup butter melted
  • 1 cup sugar (1/2 cup optional)
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon (Optional)
  • 1 1/2 cups all-purpose flour


  • Preheat toaster oven to 350°F Spray 8″x10″x2″ pan with non-stick spray. Peel and cut bananas into pieces and mash bananas until smooth. Add flour, baking soda, sugar egg, cinnamon, and vanilla extract into bowl and mix until well blended. Pour batter mix in prepared pan. Bake for 35 minutes (check at 30 minutes) at 350°F, or until toothpick or knife comes out clean. Remove from toaster oven. Carefully place wire rack over the top of the pan and flip upside down Remove pan from bread and allow bread to cool. Cut bread in half-length wise, then cut width into 8 equal strips You should now have 16 strips of banana bread ready to serve. Enjoy


  1. The best bananas for banana bread are the ones that are over-ripe.
  2. Cook time will vary depending on pan size.
  3. An aluminum nonstick pans work best for even cooking results.  Stainless Steel pans may take a little longer to cook
